Apricot Dijon Pork Chops

I have been making these incredible pork chops for a couple of years. The recipe is from Leanne Ely's Saving Dinner the Low-Carb Way, and it has been a family favorite since the first time I made them!

Here's the recipe... make them this week and let me know what you think!

2 Tablespoons butter
4 pork chops, 1/2 inch thick
salt and pepper to taste
1/4 cup apricot spreadable fruit
4 sliced green onions
1/8 cup dijon mustard
1 tablespoon cider vinegar

In a skillet, melt 1 TSP butter over med-high heat, add pork chops, salt and pepper to taste, then saute' for about 4 mins on each side or until cooked through. Remove pork chops from pan and keep warm. Now add the remaining TSP of butter, the jam, onion, mustard and vinegar to pan. Bring to a boil, then lower heat and simmer for 3-4 mins, covered. Add chops back into the sauce and heat through thorougly. Serve with sauce on top of chops.

I made these tonight with au gratin potatoes and green beans.

Your Identity

I'm listening to and studying a book that was recommended in Success Magazine called Mojo, How to Get it, How to Keep it, How to Get it Back if You Lose it , by Marshall Goldsmith.

The part I'm on right now deals with your identity, Who do you think you are? It has some great things to think about. I want to share more with you about this book, but it'll have to come after I've listened to the chapter again so I can organize my thoughts better!

Autumn Winds

So much has happened since my last post!

James graduated from high school, got enrolled at TSTC in Waco, and has started his college career.

Our Caldwell property was sold, the move to Grapeland is mostly completed, and I am in the process of finding places for all of our stuff! Decluttering has become a favorite pasttime! I am working on getting my office in order, which means lots of paper clutter has got to go. 15 mins at a time, I'm working on it when I can. Inch by inch is supposed to be a cinch, but it would be more fun to have that Sabrina the Witch nose-twitch thing! I'll get it all done in due time.

I have a new puppy! His name is Gary... Burnett's Stylish Gary Pride. He is a Treeing Walker hound pup that Darell and I bought at a benefit auction. Why? Because if you can't beat em, join em. And he's super cute too.

I have been working on getting all of our customers on a mail merge document for our Property & Casualty business. Small business skills are growing, and I'm ready to get out and prospect once I get this latest project wrapped up.

I'm eager to make a change in my business and finances, so I'm looking for ways to generate new customers and new business. I'd love any suggestions and/or referrals.

Fall is in the air! It's a beautiful scent in East Texas... you can actually smell the difference in the trees. I will post some pictures for your enjoyment by the end of the week.
